Recipe: Banana bread

Great fast energy hit with Bree’s famous banana bread recipe! The riper the bananas you use, the higher in free sugars. Excellent energy giver!

Serves: 1 Loaf

Ingredients:

1 3/4 cup wholemeal flour

½ tsp ground cinnamon

1 tsp baking soda

½ tsp salt

2 eggs

1/2 cup olive oil

1/3 cup honey

1/2 cup Greek yogurt

1 tsp vanilla extract

3 medium bananas, mashed

1/2 chopped walnuts

1/4 cup oats

Topping: cinnamon, pepitas & oats

Instructions:

Pre-heat the oven to 180 degrees celcius & grease a 9x5 inch loaf pan.In a medium sized bowl, sift in the flour, cinnamon, baking soda and salt.In a large bowl, beat eggs, oil, honey, yoghurt and vanilla until well combined. Stir in the bananas, flour mixture, walnuts & oats.Pour into the greased pan, sprinkle with some cinnamon, pepitas and oats.Bake for 50-55 mins or until a skewer inserted comes out clean.
