Recipe: Vegetable and Lamb Skewers

Sometimes beef is boring so we’ve included the delightful lamb in this recipe to spice things up. Still a respectable source of protein and if you serve these skewers with a grain salad you’ve got an excellent pairing of protein and carbohydrates.

Serves: Makes 10-15 skewers

Ingredients:

1 medium zucchini,

cut into cubes1 medium red capsicum, cut into cubes

1 medium eggplant, cut into cubes

1/2 punnet cherry tomatoes

300g back strap lamb fillets, cut into cubes

Chilli flakes

Garlic paste olive oil

10-15 skewers soaked in water overnight

Method:

Place veggies and lamb into a medium bowl and toss in garlic, chilli flakes and olive oil to coat. Skewer everything onto the skewers and fry/grill over high heat until the veggies are soft and the lamb is cooked to liking.
